Recipe: Banana Raspberry PB2 Muffins

Here is my first PB2 recipe, as promised 😉


Serves 10


  • 1 ripe banana, mashed
  • Egg
  • 1 Cup of PB2 & 1/2 Cup of water
    (or 1/2 Cup of any nut butter)
  • 2 Tbsp of Honey (or sweetener of your choice)***
  • 2 Tsp of vanilla extract
  • 2 Tbsp of chocolate protein powder (optional, though they might not rise as much)
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Baking Powder
  • 1 Pint of Raspberries

Pre heat oven to 400°F

Mix together all the ingredients, adding raspberries last (fold in gently)

Pour batter into lined & sprayed muffin tin

Cook for 11-13 mins, until tooth pick inserted in center comes out clean.

Cool and Enjoy!!

***add a bit more honey for a sweeter muffin, or if your raspberries are on the tart side.***
