Coconut flour banana muffins

Coconut flours, and all those other gf flours seem to be all the rage these days.. I have never tried baking with any of them, but since i had an extremely ripe banana on my counter, i thought id give it a try.

These muffins are best enjoyed warm.

  • 1/2 cup coconut flour
  • 4 eggs
  • 1/3 cup milk
  • 1 mashed banana
  • 2 tbsp maple syrup 
  • 1 tbsp cinnamon 
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Splash of vanilla
  • Chopped pecans – optional

Preheat oven to 350 degrees & line/spray a muffin tin.

Mix together all ingredients except for pecans.

Fill muffin tins 2/3 full with batter and top with pecan pieces.

Bake for 20 to 25 mins.
