Here is my first PB2 recipe, as promised 😉
- 1 ripe banana, mashed
- 1 Cup of PB2 & 1/2 Cup of water
(or 1/2 Cup of any nut butter)
- 2 Tbsp of Honey (or sweetener of your choice)***
- 2 Tsp of vanilla extract
- 2 Tbsp of chocolate protein powder (optional, though they might not rise as much)
- 1/4 Tsp Baking Soda
- 1/4 Tsp Baking Powder
- 1 Pint of Raspberries
Pre heat oven to 400°F
Mix together all the ingredients, adding raspberries last (fold in gently)
Pour batter into lined & sprayed muffin tin
Cook for 11-13 mins, until tooth pick inserted in center comes out clean.
Cool and Enjoy!!
***add a bit more honey for a sweeter muffin, or if your raspberries are on the tart side.***
I’m sure im way behind the times on this one, but i spotted this powdered PB at my local Costco and I was instantly intrigued. While PB does contain good fats, it is very calorically dense… this powdered peanutbutter is only half the calories, great for smoothies and baked goods too (I’m guessing). Stayed tuned for future recipe experiments.
Another attempt at a little bit of nail art, this time a Frankenstein accent nail. It didn’t turn out all that great but he is still kinda cute. Used a graffiti top coat on the non frankie nails.
Lunches at work always seem to be the most difficult. I am surrounded by tons of unheathy fast food options, so instead of indulging in a greasy burger and fries I opt to bring my own lunch with me to work… but lets face it, eating a turkey sandwich every day is just boring. So i have had to challenge myself to come up with more interesting options. Todays menu is:
seasoned beef baked wontons with salsa, snap peas with hummus and a bunch of sweet green grapes.
I posted the other day about finding P28 wraps, and today, as promised, used it as a “crust” for pizza. Topped it with spinach, sauce, red onion, yellow bell peppers, turkey pepperoni and a little bit of cheese….yum!
Had so much fun colouring this Esmeralda image from Make It Crafty. Now I am still a beginner when it comes to copic colouring… there is always something to learn, and i am a complete newbie where distress inks are concerned, but those were the two main elements that went in to this card, and i gotta say, love how it turned out.

So I was in the store picking up some protein powder, when i came across something interesting… Its called P28 wraps. Have I been missing out or what?!?!?! These wraps are 260 calories and 28 grams of protein per wrap… and they are huge… 10″ x 12″ OMG, i have struck wrap gold. They neeed to be kept frozen to stay fresh, so when i got home i quareted some of the wraps so that i could have some lo-cal high protein sandwich slices at the ready, and these bad boys are also screaming to be made into pizza crust. Clean eating at its finest.
One thing I love about autumn, is when the leaves change colour. Even though it was still 28C today, I found that the trees are just begining to show their fall colours… love it, reminds me of cozy sweaters and hot apple pie!
So I am fairly unskilled when it comes to the world of nail art, but i love it. Escpecially around the holidays, so i thought i would try my hand at something easy, a sponged mani remanicent of candy corn… you dont even have to blend the colours… its a little bright, but perfect for the halloween season. *I added a sparkly top coat… but forgot to include in the picture*
